Taamay nos ha dado la oportunidad de poder aprender no solamente del proceso de producci\u00f3n del caf\u00e9 org\u00e1nico de Chiapas en M\u00e9xico. Estos procesos son practicados desde los tiempos de los Mayas y nos sentimos afortunados de haber podido aprender de los productores.<\/p>\n<p>Visitamos las cooperativas productoras de caf\u00e9 de las comunidades tzotzil y tzotzil cerca de San Crist\u00f3bal de las Casas. Para llegar a estas, tuvimos que tomar un auto que en las ciudades servir\u00e1 de taxi, pero aqu\u00ed viaja m\u00e1s de un cliente por veh\u00edculo. El conductor no siempre habla espa\u00f1ol, por lo que tuvimos que buscar ayuda para traducir. Desafortunadamente estas comunidades no est\u00e1n bien conectadas con las ciudades principales.<\/p>\n<p>Es impresionante ver los paisajes en el camino totalmente verdes y llenos de vida. Una vez llegando a la parte final del camino a la monta\u00f1a se debe subir a pie, ya que solamente est\u00e1 el camino para que los camiones suban y bajen con el caf\u00e9.<br \/>\nLlegando a la plantaci\u00f3n de caf\u00e9, se pueden ver los \u00e1rboles de diferentes frutas como naranjas y pl\u00e1tanos que se plantan por cada uno de cafe. Esto no solo le da un sabor particular al caf\u00e9. El mismo ecosistema participa en el proceso de cultivo, ya que estos mismo \u00e1rboles (solamente de la regi\u00f3n) le dan alimento y hogar a algunas variedades de aves.<\/p>\n<p>Hicimos todo el proceso con ellos adem\u00e1s de la recolecci\u00f3n. A la mitad de la jornada, bebimos el famoso \u201cpozol\u201d que es una mezcla de ma\u00edz con agua que te llena el est\u00f3mago y te da energ\u00eda para completar la jornada acompa\u00f1ado de una gran pl\u00e1tica para recargar fuerzas y terminar la jornada.<\/p>\n<p>M\u00e9xico cuenta con una gran variedad cultural, ling\u00fc\u00edstica y con paisajes los cuales crean el escenario perfecto mezclado con la calidez de los locales para darnos un producto de gran calidad e indudable sabor con un gran toque de historia.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>En la actualidad es muy com\u00fan llevarse una idea incompleta&hellip;<\/p>\n","protected":false},"author":3,"featured_media":3329,"comment_status":"closed","ping_status":"closed","sticky":false,"template":"","format":"standard","meta":{"_acf_changed":false,"inline_featured_image":false,"footnotes":""},"categories":[5],"tags":[],"class_list":["post-3285","post","type-post","status-publish","format-standard","has-post-thumbnail","hentry","category-sin-categorizar","entry","has-media"],"acf":[],"yoast_head":"<!-- This site is optimized with the Yoast SEO plugin v24.9 -
